Blondies

I don't know about you guys, but usually every Christmas i get a box of Celebrations. Its almost a tradition and as such, every year i tend to make "Celebration Brownies" with the majority of the Snickers and Mars. *You always get loads of them don't you?*

Anyway, this year i didn't get a single box and to be honest I'm kinda craving them so i decided to shake it up a bit. I decided to test out the food mixer i got from Agent D and made a batch of Blondies.

What are Brownies you ask? Well they are simply brownies minus the cocoa powder and you make them with white chocolate instead of milk.


You'll need
225g (8oz) Caster Sugar
150g (5½oz) Plain Flour, sifted
225g (8oz) Butter, melted, plus extra for greasing
4 Eggs
225g(8oz) White Chocolate, chopped


To make
In a large bowl, Mix together the sugar and eggs until pale and fluffy. Add the melted butter a little at a time, mixing thoroughly.


Add the flour and carefully fold it into the mixture using a metal spoon.

Add the chopped white chocolate carefully fold them into the mixture.

Pour the brownie batter into a greased cake tin. I like to use greaseproof paper but you don't have to if you don't want to.

Pop it into a pre-heated oven (180C/Gas 4) and bake for 30-35 minutes, (or until a skewer inserted into the centre of the brownies comes out clean).

When cooked, transfer to a wire rack to cool.


They are delicious warm and you can add extras to the mix if you like. Fresh raspberries are lovely with the white chocolate or you can mix in some nuts.
