- 125g butter
- 150g caster sugar
- 190g self raising flour
- 1 teaspoon vanilla extract
- 1 egg (at room temp)
- 2 very ripe bananas
- 60ml milk
Pre heat the oven to 180c/gas 4 and grease up a loaf tin. Peal and mash up the bananas in a large bowl. This is much easier when you use a fork.
Gradually beat in the egg, milk and flour. You will see some lumps from the banana but make sure the rest is well mixed.
Pour the mix into the greased loaf tin and bake at 180c for around 30 minutes (till the skewer comes out clean).
*I find that the top tends to brown a lot quicker than the inside cooks. Granted that this could be cause my oven is on its last legs but if this happens to you too, what I do is cover over the top with greaseproof paper and it stops the top burning while the middle cooks.
Every now and again when we make a load we will add extras if available, such as frozen blueberries or dollops of Nutella in the middle. It changes it up and still tastes amazing!
