Honeycomb

I love experimenting in the kitchen. When I find a recipe I like, I just cant wait to try it.

More so if I have a special occasion. Like Christmas perhaps? Maybe some delicious Crunchy Honeycomb? Why not!


You'll need
4 tablespoons Golden Syrup
200g Caster Sugar
3 teaspoons Bicarbonate of Soda
To make
Grease a large tray, I recommend silicone, and set to the side close by where your working.

Use the largest saucepan you have to heat the golden syrup and sugar together, bring to the boil then simmer on low heat mixing all the time so that you don't burn it to the bottom of the pan.


They do state that the cooking time will vary depending on the cooker but that you should test the mix by dropping a little syrup into water - it should become brittle when ready.

Remove pot from heat and add the bicarbonate of soda. At this point make sure the tray is next to you as its going to fix up REALLY FAST! 

When you add the bicarb you need to keep stirring so it all gets mixed in together, then quickly pour it into the tray and leave to set. 
Its going to at near triple in size so seriously use a big tray and the biggest pot you have.


Allow it time to set ... Have your self a wee cuppa tea and stick the pan in the sink with some hot water to soak it.

Once its hardened completely you can smash it up (i quite enjoyed bashing mine with a rolling pin. Kind of therapeutic).


Once broken you should store in an air tight container and it should keep for up to 2 weeks ... If it isn't all munched before then :)
